The Salvation Army is seeking an **Assistant Food Services Director** to provide culinary delights to the William Booth Center kitchen and Seattle Social Services. This roll will be responsible for assisting with the supervision of staff, preparation and serving of meals and conducting food safety inspections as required.

The Assistant Food Services Director works closely with staff in the kitchen and will work toward assisting with the lab instruction of the Foodservice Training Center students in the kitchen and cleaning/maintaining sanitary standards in the kitchen. This position will receive supervision from the Food Services Director.

This position is full-time, exempt and located in Seattle, Washington.

**ESSENTIAL DUTIES AND RESPONSIBILITIES**

**Oversees Cook III and below assignments with Food Service Director**

* Leads all personnel assigned to the kitchen including volunteers during shift and/or in absence of the Food Services Manager.

* Assists the Food Services Manager with catering duties and driving the canteen or other food delivery vehicles when necessary.

* Provide meal service for any special event, i.e. Advisory Board meetings, Womens Auxiliary meetings, Thanksgiving and/or Christmas meals for volunteers and SAC Metro PR events.

* Prepare meals during his/her shifts.

* Trains staff and volunte/ers to assist in food preparation and storage under adverse conditions.

* Assists with storage and receipt of food goods received.

* Reports problems in writing (Incident report) to Food Service Director.

* Assists the Manager with maintaining efficient and competent performance of all operations relating to the kitchen, i.e. food procurement, food preparation, food storage, sanitization of kitchen utensils and kitchen cleanliness.

* Ensures meals are set up and cleaned up including but not limited to dishwashing, cleansing, and sanitizing equipment and systematic cleaning of major appliances.

* Maintains a safe and sanitary environment for food preparation and storage under adverse conditions.

* Ensures safe, sanitary, nutritious and attractive food preparation (meals, snacks, special occasions, etc.).

* Assist Food Service Director in scheduling pick up of supplies and limited donations (e.g. food, Christmas related items, etc.).

* Researches and communicates different methods of minimizing food expenses (e.g. obtaining bids from various vendors, searching for best prices, etc.).

* Maintain a weekly schedule of assignments for the staff and volunteers as well as Alternative Sentencing participants (Community Hours Program).

* Develop weekly menus that are creative, nutritious and appealing making maximum use of donated foods and USDA commodities.

* Utilize USDA material to ensure proper inventory and meal productions.

* Conduct monthly physical inventory of kitchen food and supplies as well as maintain daily usage records to be submitted to the Manager.

* Perform related duties as assigned by supervisor.

**Culinary Training Assignments**

* Assist the Food Service Director with the research and planning phase of opening a Food Service Training program.

* Assists the Food Service Training Center team with recruitment and promotion and conducting interviews for potential students.

* Assists with the coordination of teaching and instruction for Foodservice Training Center students

* Assists the Food Service Director with the program development, and management of the Culinary Training Classroom activities to help accomplish program goals and objectives.

* Instructs Students during the theory, lab and hands on training in the kitchen.

* Monitor students' performance to make suggestions for improvement and to ensure that they satisfy course standards, training requirements, and objectives.

* Maintain records and necessary documentation to support class-training and student progress.

* Maintain tracking record of all graduating class students; provide on-going mentorship with current and previous shelter clients.

* And other related duties as assigned by supervisor.

**EDUCATION AND WORK EXPERIENCE:**

* HS Diploma or GED

* Must have graduated from Accredited Culinary Arts Program or Accredited Culinary Arts School

* 5-7 years of experience of working as a cook in the culinary field

* Possession of a valid Washington State Drivers License

* Authorized to or able to gain approval as a driver of Salvation Army vehicles

* Ability to pass background check

* Ability and willingness to understand and fully comply with mandatory reporting requirements, laws, and TSA policies pertaining to protecting vulnerable adults and children

* Willingness to abide by the Salvation Armys drug and alcohol policy

* Possession and retention of current Washington State Managerial Food Handlers Permit required before first day of work

* Documentation of current TB test, CPR and First Aid certification and completion of Bloodborne Pathogen training within 90 days of employment

**MATHEMATICAL SKILLS**

Ability to add and subtract two-digit numbers and to multiply and divide with 10's and 100's. Ability to use Culinary Calculations to ensure proper food purchase and recipe development. Ability to perform these operations using units of American money and weight measurement, volume, and distance.

**PHYSICAL REQUIREMENTS:**

* Ability to sit, walk, stand, bend, squat, climb, kneel, and twist on a recurring basis

* Ability to grasp, push, pull objects such as files, file cabinet drawers, and reach overhead

* Ability to operate telephone

* Ability to operate a desktop or laptop computer

* Ability to lift up to 60 lbs.

* Ability to access and produce information from a computer

* Ability to understand written information
