Job Description:

Madison College's Dining Services is hiring a Back of House (BOH) Supervisor to lead and supervise BOH staff at the Truax Campus.

The BOH Supervisor will oversee menu development and production schedules for the Truax and School of Health caf, quick-serve retail operations, and catering. Key responsibilities include ensuring proper food production practices, maintaining sanitation and safety standards, and managing cleanliness in BOH areas.

The Back of House Supervisor also assist with procurement, inventory management, and maintaining customer satisfaction. Schedule flexibility is a must, as the BOH Supervisor may need to fill in outside regular hours.

This position reports to the General Manager.

This is a full time, 52-weeks per year position with flexible working hours between Monday - Friday 6:30am - 5:00pm

Essential Responsibilities:

* Hire, train, schedule and supervise kitchen staff. Manages schedules and assigns the work of all kitchen staff to assure budgeted labor cost projections are met. Adjusts staff schedules to meet immediate service needs. Step in to work all stations as needed. Build a team with kitchen staff to produce high quality food selections. Maintain a professional workforce that is efficient and courteous to all guests. Develops standard operating procedures to ensure consistently high quality services while minimizing costs and waste. Identify processes and procedures to eliminate inefficiencies to optimize the operation. Monitors the work of assigned staff and notifies the staff or appropriate management personnel of the need for corrective action. Notifies the appropriate personnel of process and/or quality problems.

* Evaluates all final products to assure quality standards are attained and maintained. Work to enhance and measure quality of menus and products. Ensure food safety protocols and standard recipes are followed. Ensure that high standards of customer service is maintained. Resolve challenges as they arise by offering quick solutions that are in the best interest of customers, BOH staff and Dining Services. Manages staff to ensure that high standards of sanitation, cleanliness and safety are maintained.

* Works in conjunction with the Front of the House (FOH) Supervisor to ensure all areas in dining services are staffed and prepared to service customers. Meet on a regular basis with FOH Supervisor to coordinate schedules, cleaning activities, station closures and evaluate customer feedback. Provide recommendations based on customer feedback to make improvements/changes where applicable. Work with FOH Supervisor to develop a workflow to effectively communicate with staff on a regular basis. Conduct cross-training to promote professional development and create an onboarding program to ensure training for new staff is consistent.

* Assist with managing the procurement process of all food and supplies by assessing the needs of the kitchen production based on time of year. Assist with inventory management of products and food supplies; track expiration dates, categorize by turnover rates and regular inventory counts. Set up inventory receiving procedures to Evaluate products and related goods to assure that quality, price and consistency are met.

* Update and develops standard operating procedures to enhance and measure quality of services. Train and mentor BOH staff with hands-on techniques, feedback, and guidance with different methods, such as demonstrations, shadowing, coaching, and pairing to help them develop their skills and confidence.

* Maintain high safety and sanitation standards as they apply to the handling of food, beverages, work areas, and equipment. Use standard food handling and sanitation practices, including HACCP (Hazard Analysis Critical Control Point) guidelines. Evaluate and recommend staff to participate in the Wisconsin Serve Safe trainings. Maintain all equipment through Preventative Maintenance schedules with Madison College approved vendors. Partner with facilities and risk management to ensure areas are in compliance with all state, county, city, and college safety protocols. Notify staff of any changes to procedures and processes for safety of facility. Facilitate preventative maintenance on all kitchen equipment. Inform and educate staff on personal hygiene standards per Dane County Health and Food Services regulations.

* Ensure cohesion by working with other managers and departments to identify opportunities to use staff skill sets and provide cross-organizational growth opportunities. Engage in self-directed personal and professional development related to emerging technologies and trends relevant to business needs. Attend conferences, seminars, and workshops to ensure continued development of professional skills. Participate in campus committees, councils, and groups to increase campus-level knowledge and awareness. Proactively engage with committees, governance, and other departments to help guide and inform organizational decision-making. Participate in activities of relevant professional associations.

Knowledge, Skills & Abilities:

* Experience leading high volume fast-paced back of house work environment, including multiple production schedules, staff management and catering. Critical thinking abilities to include crisis and situational management. Training practices for implementation of new processes.

* Demonstrated knowledge of an entire food menu and it's preparation.

* Facilities awareness including operational purchases, troubleshooting equipment failures, recommending repairs, scheduled maintenance and remodeling needs.

* In accordance with College management procedures, demonstrate organization, time management, resource management skills. Professionally reporting problematic staff issues to appropriate personnel. Knowledge of Microsoft Word, Excel, Outlook, Social Media platforms, and general knowledge of kitchen equipment.

* Supervisory experience with waitstaff, catering, cashiering, cooking experience, understanding of food principles, menu development, food safety, customer service relations, short and long term operational planning.

Minimum Requirements:

* Associate Degree or equivalent working experience. *Experience used as an equivalent of an educational requirement is in addition to any experience required by the position.

* Five (5) years of directly related work experience required to successfully perform this position.
