Come craft a career as fulfilling as our breads, and help us rise to new heights together!The Bread Production Manager maintains and administers operational tools for managing cost, waste, and financial performance of the prepared bread program. This position encompasses both administrative and hands-on management with at least 75 percent of the time spent working on the floor with the production team.All managers in our bakery are expected to work cross-functionally and gain the necessary expertise to manage all areas of the bakery when they are running the floor. While their primary area of focus is driving their respective areas of the program they are collectively responsible for the overall success of the bakery including planning team and total program development with guidance from senior leadership.All Bread Alone managers must ensure that their department is running safely, smoothly, efficiently, and in accordance with our Purpose, Values, and Culture. Managers are responsible for setting good habits and culture within the business. Managers work alongside their teams to train, anticipate challenges, problem-solve, and innovate.Managers are responsible for actively troubleshooting and communicating with leadership across all departments around issues that arise during the course of the shift. Managers hold themselves and all teammates accountable to Bread Alone safety, culture, and employee conduct standards and they must address any product, equipment, and team issues in accordance with Bread Alone policy. Hours:This is a full-time role with a Sunday-Wednesday schedule from 5:00 am - 3:30 pm. We strive to make schedules as manageable as possible to encourage and allow work-life balance. Join us as we collectively strive for excellence in aligning our aspirations with meaningful actions.RequirementsDuties and Responsibilities:Duties, responsibilities and essential job functions include but are not limited to the following:
  • Responsible for the safe, efficient, high quality operation of your department
  • Take ownership of ensuring that all product leaving your department meets Bread Alone standards and notify department director of any obstacles
  • Ensure that supervisors and professionals under your supervision are on schedule to complete their work correctly, in full, and in a timely manner
  • Actively communicate any work delays or product issues as soon as possible
  • Effectively communicate guidelines for safe and efficient operation of work stations
  • Ensure that all applicable safety, GMP, culture, and food safety standards are followed by you and all team members
  • Communicate with managers in other departments around any observed issues related to performance or compliance involving their teams
  • Have a full working knowledge of safe equipment operation, including calibration, routine maintenance and routine troubleshooting in your department
  • Properly document and report any maintenance issue outside of your training or responsibility
  • Take necessary steps to mitigate any interpersonal issues that arise and seek support when needed
  • Responsible for scheduling hourly staff, managing requests for time off, and call outs
  • Coordinate with the People department to ensure accurate weekly payroll by maintaining staff punches, making necessary adjustments, and signing off on weekly hours for your department
  • Collaborate with department director to proactively build your team and recruit any necessary resources to maintain adequate staffing levels
  • Consistently analyze training materials in your department to ensure that they reflect the most up to date work standards
  • Provide feedback to directors on areas of improvement within our protocols and guidelines
  • Support hiring decisions by facilitating trials, assessing candidate fit, and providing feedback to director
  • Support training and continued development of professionals through hands-on work and coordination with supervisors
  • Gain a working knowledge of all systems (physical, mechanical and technological) in use in your department and seek to continually expand your knowledge and comfort with those systems
  • Actively listen to team members, provide feedback to other managers and directors on any issues and seek support when necessary
Job Requirements:
  • Master Bread Alone bread recipes, baking techniques, and recipe scaling necessary to make adjustments required by variable weather and ingredient conditions
  • Master the programming, operation, and troubleshooting of Rheon lines, of retarder/proofer system, ensuring that all Bread Alone doughs can be processed, portioned and proofed to specification
  • Master the operation and troubleshooting of Heuft loading system, deck oven operation, and rack oven operation, including creating and modifying baking programs
  • Master the operation and troubleshooting of slicers and metal detectors, ensuring bread is sliced efficiently and to specification
  • Master the programming, operation, and troubleshooting of Kwik-Lok machines, ensuring product is coded clearly and accurately
  • Ensure that products leaving your department are produced and packaged in Full, In time and accurate to order
  • Master appropriate use and upkeep of production department small wares such as proofing carts, proofing baskets, baking trays, baking pans
  • Maintain a working knowledge of ingredients and packaging material specification and proactively monitor for deviation
  • Develop a working knowledge of Bread Alone Food Safety Program
  • Develop working knowledge of Bread Alone Production Book, ensuring that production reports can be printed as needed, and any discrepancies resolved
  • Cooperate with management team to improve product quality through recipe, procedure, or equipment innovations on the production floor, and complete research and development alongside production
  • Lead and implement improvements, including but not limited to quality & food safety, workplace safety and production efficiency, as agreed with the management team
  • Cooperate with the management team to develop and implement necessary tools to collect useful data to track production efficiency, improve communication between workstations and minimization of waste/loss.
  • Able to stand for long periods of time while executing tasks quickly and accurately
  • Able to to work in a physically demanding fast-paced environment
  • Able to tolerate exposure to high levels of heat and cold
  • Able to twist and bend repeatedly for long periods of time
  • Able to pull, push, move and lift to waist level
  • Able to carry awkward and shifting weights up to 50 pounds in a safe and controlled manner
  • Able to work with, handle, operate, and control hot equipment and products in a safe manner according to Bread Alone guidelines
  • Willing to follow all Good Manufacturing Practices which includes but are not limited to: Removing any visible or exposed piercings and body jewelry, personal accessories, false nails & refraining from makeup at work (ie. mascara or heavy foundation, lipstick)
  • Respect for and comfort with a diverse and inclusive workplace
  • Able and willing to use personal protective equipment (PPE) and assigned uniform as required per company policy
  • Able to gain proficiency in operating and instructing on the proper use of all systems(physical and technological) in use in your department
  • Willing to follow all safety guidelines set out by Bread Alone
  • Willing to take responsibility for your own and others safety by strictly enforcing all safety rules and regulations and taking steps to mitigate any unsafe conditions or practices enlisting the help of others as needed
  • The Bakery is open 365 days a year and team members must be willing to work consistently throughout the year which includes holidays and weekends
Job Type: Full-time, exemptCompensation Details: Bread Alone is deeply committed to ethically balancing the demands of the business and paying a living wage to all those who contribute to our success. Pay for this position is $62,000-$80,000 per year. We Offer:
