Summary of Duties: A Beef Modernization Sorter is responsible for evaluating carcass and its parts for potential food safety concerns prior to USDA inspection. Beef Modernization Sorters must have a high attention for details and the ability to make decisions based on potential pathology, presentation, or other food safety concerns in a fast-paced environment. Beef Modernization Sorters will undergo continuous training and are expected to work as a team in training and educating others.
Essential Duties and Responsibilities:
- Observe, Incise or slice, and/or palpate various pieces of carcasses, heads, or organs to evaluate for food safety concerns
- Make decisions based on abnormalities seen during evaluation
- Correctly identify and label carcasses or parts that require a veterinarian diagnosis and disposition
- Assist in maintaining sanitary conditions of processing by ensuring fellow employees are following SSOP and GMPs
- Work closely with production employees, Leads, Supervisors and Superintendents, as well as USDA-FSIS personnel
- Communicate repetitive presentation issues to production and Modernization Management
Knowledge, Skills, Abilities:
- Beef Harvest Industry Experience
- Must be able to work schedule which could include Saturdays, and required overtime, if necessary
- Ability to communicate and work effectively with other Sorters, Production personnel, and USDA FSIS personnel
- Ability to make repetitive movements such as lifting, pulling, and pushing
- Ability to use and maintain a sharp edge on knives
- To know, or to learn beef animal anatomy and pathological conditions
- A high attention for detail
- Strong problem-solving skills
Education and Experience Requirements:
- High School Diploma or equivalent required
- Requires 2 or more years of of experience in related
- Experience as a FSIS inspector or Beef Slaughter QA preferred
