Job Overview: The Chef De Cuisine (CDC) is instrumental in the success of culinary department at the Dancing Bears Resturant at HIgh Peaks Resort, Lake Placid, NY This person would be responsible for culinary operations in all the food production areas of the kitchen, mainly in the outlets and banquets, in order to maintain high standards of quality.
Responsibilities and Duties:
Instrumental in the culinary operations on property.
Prepare requisition for supplies and food items for production.
Schedule culinary staff for proper labor levels in the kitchen.
Observe production flow and make adjustments in order to adhere to control procedures for cost
and quality.
Manage, train, mentor kitchen team members in all levels of culinary support and direction.
Monitor to ensure proper receiving, storage (including temperature-setting) and rotation of food
products so as to comply with Health Department regulations, including coverage, labeling, dating,
and placing items in proper containers to ensure product freshness.
Involved in the colaboration of Write, maintain and update all menu specifications, recipes and pictures.
Check to see that all equipment in the kitchen is clean and in proper working condition and write
work tickets for any equipment in need of repair.
Thorough working knowledge of hot and cold food preparation.
Good working knowledge of accepted sanitation standards and Health Codes.
Extensive skill in the usage of slicers, mixers, grinders, food processors, etc.
Setting the example of professionalism in behavior, communication and attention to detail
Education:
A culinary degree or 5 years of equivalent hotel and or restaurant knowledge
Knife skills
Serve Safe certifications active
Requirements:
2-3 years managing culinary team members
Working confidently within MS Outlook, Word, Email
