**Role Summary**

The Chef de Cuisine is responsible for supervising the entire kitchen operation of Bear Restaurant. Directs the preparation and execution of all food items from the restaurant. Provides leadership and supports the team in achieving departmental goals and objectives.

**Core Responsibilities**

The key responsibilities for this position are:

* Orders daily supplies from the storeroom. Consults with the butcher and garde manger on specialty items needed. Supervises all cooking activities in the kitchen to ensure the highest quality of products. Inspects storage and coolers daily. Ensures that equipment is in proper working condition and used according to standard.

* Conducts on-going training sessions with kitchen personnel to increase their knowledge and capabilities in the department. Responsible for ensuring that kitchen employees are adhering to hotel policies and procedures; administers corrective action when necessary. Ensures a safe working environment for employees.

* Develops menus with the Executive Chef and implements the same. May work on menus in other outlets and special functions as needed.

* Works closely with restaurant manager on service procedures and the coordination of meals to the guests. Checks daily reservation to determine the number of guests to be served. Advises Executive Chef on staffing needs.

* Works with Pastry Chef on the dessert menu.

**Supportive Functions:**

In addition to performance of the essential functions, this position may be required to perform a combination of the following supportive functions, with the percentage of time performing each function to be solely determined by the supervisor based upon the particular requirements for the hotel.

* Participate in management training sessions, communication and planning meetings.

* Participate in employee and community relation functions.

* Participate in meeting with clients from Group and FIT sales.

* Participate in promotional events outside of the resort as needed.

* Interface with guests in outlets on a regular basis for guest satisfaction and PR purposes.

* Performs other duties as required.

**SPECIFIC JOB KNOWLEDGE, SKILL AND ABILITY**

The individual must possess the following knowledge, skills and abilities to be able to explain and demonstrate that he or she can perform the essential functions of the job with or without reasonable accommodation, using some other combination of skills and abilities.

* Ability to step into any culinary station in the kitchen including pastry line.

* Knowledge of a wide range of cooking styles including all European, American, and fusion techniques.

* Understanding of basic food cost and payroll cost control.

* Experience with discipline documentation process in an union environment.

* Experience in interviewing line and management positions.

* Experience in training and have attended train the trainer classes.

* Ability to work on computers and understanding of Google Suite.

* The ability to follow instruction, direction, and meet deadlines. Minimize waste and spoilage.

* Ability to read, write, speak and understand the English language.

* Must be self-motivated and results oriented.

* Ability to project self in a professional manner.

* Individual should be detail oriented and accurate.

* Overall knowledge of food and beverage items, basic food costs and payroll cost control.

* General knowledge of accounting principals and understanding of financial reports.

* The ability to think and respond quickly to pending problems and ability to effectively process information and prioritize tasks at hand.

* Ability to make decisions that are in the guests and departments best interests.

**Required Qualifications**

* Manager ServSafe

* Three years kitchen experience in related settings;

* Prior management experience in the field is preferred.
