Job Description:
We are looking for Lead Chef for Bruce Marder's restaurant concepts Capo Santa Monica and C29 St Helena. Capo and C29 are concepts that is really misunderstood in culinaria. The restaurant has embraced the word simple . It is not a 3-star restaurant style but rather embraces classic cooking techniques on every level. C29 uses the best ingredients to showcase the best food products available, cooking those ingredients to their optimum flavors and tenderness. Using products in the simplest ways is much more difficult, there is nowhere to hide by masking them with more. This style focuses on preparation techniques to bring out the best of the products. The plates prepared by the chef must show a simple elegance. The kitchen staff must be eager to learn but as we know need constant supervision to create trust and use the correct techniques and plating. This is a position that requires the chef to be working nightly with the staff helping to create the best. A chef applying for this position has to embrace this concept; follow the existing recipes and techniques; make the existing recipes and techniques better and creatively making new dishes in the same style. There is also the passion for cooking by Bruce. After 55 years of cooking he is always trying to do better. Working with him to discuss old techniques and newer dishes is exciting to him. He wants to always create dishes, be involved and learn more. There are the usual responsibilities of leadership, good communication, inventory, food cost, labor issues and working with management and service to enhance the customer's experience.
