May break down and prepare proteins for service, including but not limited to, beef, chicken, pork.* Prepare pans for oven and broiler.* Load and unload ovens and broilers.* Cooking techniques such as grilling, frying and broiling, brick oven, and sauteing to order.* Set-up steam kettles and unload including but not limited to pasta and rice.* Slice, dice, julienne & blanch vegetables for service.* May follow a simple recipe, including but not limited to composed salad, compound butter or oil, salad dressing, pizza sauces, basic sauces; including but not limited to spicy mayonnaise's, or mustard's, chutneys.* Utilize Personal Protective Equipment per guidelines.* Keep fryers, ranges and broilers clean.* Check and get supplies.* Responsible for keeping kitchen and satellite stations and equipment clean.* Maintain a clean, safe and sanitary work station, equipment and utensils.* Safely operate machinery and equipment and set up/breakdown work stations.The Chef Helper is a part of the success of the food service program, by following all Health Department regulations, Food Standards laid out by Vassar College with regards to food quality, freshness, presentation & ECO Sure Audit Compliance.Schedule: Academic Year, Gordon CommonsMonday-Thursday and Sunday 1:30pm-10:00pmThis position will have a written and cooking test.Qualifications* Sound level knowledge of proper food handling HACCP.* Sound level knowledge of sanitation.* Knowledge of proper operation of commercial food service equipment.* Ability to place, position and move heavy objects up to and including 50 pounds.* Demonstrated ability to work with little supervision.* Demonstrated ability to work harmoniously with staff and customers.* Ability to communicate effectively in English, including understanding, speaking, reading and writing.* Willingness to work overtime as available.
