Commissary Manager Job Summary: The Commissary Manager position is one of organization, control, and coordination among and between our vendors and purveyors and the individual operations on the Claudio's property.As the company grows, centralizing our purchasing, receiving, stocking and production is a critical function in controlling costs throughout the property. The Commissary Manager's role is to ensure the proper execution of these responsibilities under the direction of the Executive Chef. Annual negotiations occur with our vendors and purveyors to ensure the Company receives the highest quality of products at the most competitive prices. Adhering to these agreements and confirming receipt of the specific products and brands, at the agreed upon quality and prices, is of the utmost importance.The Commissary is the heart of the food & beverage program on the property and must follow strict standards to support the consistent execution of each restaurant's daily operations. Streamlining and simplifying the Commissary's operating standards is crucial to ensuring the success of the Company. What You'll Do:
- Based on past ordering history, sales detail, and revenue projection, ensure proper levels of inventory to meet the demands of each operation, considering the unique seasonal changes of the property
- Place daily, weekly, and monthly orders of inventory according to the needs of each operation so that sufficient supply is available with a focus on limiting waste and loss at all times
- Ensure each and every delivery is met by the Manager and such receipt is approved against the corresponding purchase order for accuracy in quality, quantity, and price
- Stock and store each and every delivery immediately after receipt according to FIFO standards; labeling/marking existing product to guarantee consistent product rotation
- Ensure each operation prepares their requisition in a timely manner and in accordance with the requisition standards
- Work with the Commissary Kitchen to ensure timely receipt of requisitions, preparation of requisitions, and the re-sale of finished products from the Commissary Kitchens
- In a timely manner, prepare each operation's requisition so that each operation may retrieve their requisitions without delay or missing product
- Based on annual negotiations made by the Company, ensure purchases are concentrated to approved purveyors and vendors and that such purveyors and vendors deliver both the specific brands at the agreed upon prices
- From time to time and at regular monthly intervals, check prices from other purveyors and vendors to ensure our approved purveyors and vendors' prices are competitive
- Ensure the cleanliness and organization of the Commissary facility, all coolers, and the immediate areas around the facility and coolers
- Ensure the passing of all health inspections and/or the removal of any possible health violations
- Ensure the proper working order of all equipment within the Commissary facility and coolers
- Ensure the security of the Commissary facility and coolers
- Screen, hire, train, and evaluate Commissary team members to support the Commissary functions and volume of the property
- Control labor cost of the Commissary team members by properly scheduling their time and managing their work according to the needs of the Commissary
- Work with Executive Chef to develop and maintain operating materials including SOPs, team member schedules, cleaning schedules, seasonal opening and closing schedules, and the like, to ensure consistent and smooth Commissary operations
- Execute monthly inventory and report details to the Executive Chef for confirmation and discuss potential areas of improvement whenever possible
- Any additional projects based on the needs and requirements of the Company
