This position reports to the Garde Manger Banquet Chef and Sous Chefs. This role is important to the functions of the cold banquet kitchen, servicing the banquet needs of our guests while ensuring quality of the highest standards in presentation, safety, quality, and profitability of food.

What will I be doing?

As a Cook II, you are responsible for impeccable guest service, food safety practices, and financial profitability daily. A Cook II at the Hotel Del Coronado is responsible for maintaining and setting up food production and quality control of all food items. Specifically, you would be responsible for performing the following tasks to the highest standards:

  • Preparing all cold food instructed by the Chef for the day-to-day BEOs, including making salads, peeling and cutting fruit, making dressings/vinaigrettes/aiolis/remoulades, preparing seafood items, and appetizers, following recipes set forth by the Chef and adhering to all standards.
  • Maintaining safe and cleanliness procedures to comply with all health standards according to state, federal, and local guidelines.
  • Keeping and maintaining good attendance.
  • Knowledge of knife cutting skills following all safety guidelines.
  • Proper food storage and safety (FIFO and storage rotation) following state, federal, and local guidelines.
  • Standing, bending, in a fast-paced environment for up to 8 hours a day.
  • Availability for weekends, holidays, overtime, and flexible availability based on business level and occupancy.

A VALID FOOD HANDLERS CARD IS REQUIRED FOR THIS POSITION

The hourly rate is $21.12 - $24.85 and is based on applicable and specialized experience and location.
