Overview:
I'm currently looking to recruit an experienced Corporate Chef to lead culinary operations across multiple high-volume restaurants specializing in French Mediterranean cuisine. The ideal candidate will have a solid background as a Corporate Chef in the USA, with a strong emphasis on maintaining high culinary standards and driving operational excellence.
Key Responsibilities:
- Maintain and enforce culinary standards.
- Oversee operations across various restaurant locations.
- Manage all kitchen activities including food purchasing, preparation, and quality control.
- Ensure sanitation and cleanliness meet DOH standards.
- Support the Operations Department in meeting their objectives.
- Collaborate on menu planning and development.
- Innovate and create special dishes to enhance the guest experience.
- Conduct menu costing and evaluations with the cost control team.
- Manage recipe development and ensure operational consistency.
- Train staff on new dishes and menu launches.
- Regularly audit food quality and recipe adherence.
- Develop standard recipes and techniques to maintain quality and minimize costs.
- Evaluate food products for quality and cost efficiency.
- Work with Food and Beverage and Operations management to exceed guest expectations.
- Stay updated on the latest food and beverage trends and implement them accordingly.
- Collaborate on menu descriptions, food matrix, and sourcing updates.
Requirements:
- Extensive experience with French Mediterranean cuisine.
- Proven track record in high-volume, high-standard culinary environments.
- Culinary degree (2- or 4-year) required.
- Minimum of 10 years in kitchen managerial roles, preferably as Head or Executive Chef.
- Significant experience in the USA culinary scene.
- Excellent verbal communication and leadership skills.
- Strong attention to detail and organizational abilities.
- Proficiency in computer applications such as Excel and Windows.
- Ability to adapt and excel in a fast-paced kitchen environment.
