Today, the Foley Family Wines & Spirits portfolio boasts a number of the most-celebrated names in wine, including Chalk Hill Estate, Chalone, Ferrari-Carano, and Sebastiani.Job SummaryThe Culinary Director role is a dynamic role that maintains direct oversight of all aspects of the Foley Family Wines Culinary Department. Responsibilities will include the management of all Culinary Department employees, development and execution of all culinary programs, management of budgets and costing, health and safety, and management of all vendor relationships.Essential Duties & Responsibilities

  • Direct oversight of all aspects of the Foley Family Wines Culinary Department across multiple properties
  • Responsible for both the hiring and training of Foley Family Wines Culinary Department employees
  • Responsible for the development and execution of all culinary programs on and off site, including recipes for newsletters, website, ecommerce, and social media.
  • Manages Culinary Department budget and costing associated to ensure profitability and drive wine sales and club conversion
  • Manages vendor relationships
  • Works collaboratively with Hospitality Centers, Events Department, Landscaping Department, etc. to develop and execute best in class food and wine programs that highlight brand equity
  • Establishes and maintains best-in-class food safety and service standards for Foley Family Wines Culinary Department and communicates all safety and cleanliness standards in accordance with county and state regulations
  • Develops educational/interactive program(s) to drive new experiences both onsite, virtually, and in market.
  • Trains all culinary team on new recipe execution and development
  • Responsible for all local, state, and federal guidelines around food services rules & regulations
  • Provides staff education on all food and wine pairings, and partners with front of house management on developing service standards and training
  • Any other duties assigned
  • Education & Experience
  • College or culinary training or 10 plus years of culinary experience, including management experience.
  • Commitment to quality service and food and beverage continuing education
  • Knowledge of kitchen training techniques and food and wine dynamics
  • Awareness of local, state and federal health and sanitation requirements
  • 5+ years of fine dining culinary experience
  • 5+ years' plus management experience
  • Experienced food ordering and procurement
  • Computer skills and ability, including MS Office Suite and Tock
  • Valid California's Manager's Food Handler's Certificate
  • Understanding of proper use of kitchen equipment, such as stoves, refrigeration, slicers and knives
  • Knowledge, Skills & Other Abilities:

  • Maintain high standards of quality control, hygiene, health and safety
  • Works flexible schedule including evenings, weekends
  • Physical Demands:
  • Must be 21 years or older
  • An employee in this position will be performing a wide variety of tasks requiring attention to detail, calmness and creativity in dealing with employees and customers, and the ability to think and react quickly under pressure
  • Ability to communicate in a clear, understandable speaking voice, capable of communicating information to fellow employees, vendors and guests
  • Accurate and clear vision and hearing. Ability to work in standing or seated position for extended periods of time
  • Ability to repeatedly stoop, lift and carry 40 lb. cases of wine
  • Sufficient digital manipulation skills to utilize a computer keyboard
  • Ability to walk (for long periods of time) for purpose of event coordination
  • Capable of following reasonably complex directions as well as being able to effectively communicate with co-workers and customers by telephone, email and/or in person
  • Pay Scale: The base pay range offered for this position is $110,000.00 - $120,000.00 per year. This range is what we reasonably expect to pay for this role. The actual compensation offered will be based on several factors, including but not limited to, qualifications, skills, experience, education, internal equity, and alignment with market data.Company Core Values:
