The Estate Cook is essential to the culinary team, responsible for preparing and cooking high-quality dishes daily. This role involves following established recipes, executing food prep, and maintaining kitchen cleanliness. Requirements
- Participate with and work closely with the PW team and Sous Chefs to ensure smooth operation and meal service.
- Efficient with precision knife skills and volume cookery.
- Cleaning, cooking, and preparing high-quality produce and meats to the highest standards.
- Execute complex recipes and classic French cooking techniques.
- Follow established recipes and cooking instructions to ensure accurate preparations.
- Maintain an organized workspace to facilitate efficient food preparation.
- Assist with plating and presenting dishes for service promptly and adhere to high standards of taste and presentation.
- Assist with tracking kitchen supplies and notifying Sous Chefs when inventory is low and participate in stocking and organizing pantry items and supplies.
- Communicate effectively with team members and maintain a can-do attitude.
- Support the preparation of meals for special events, assisting during service as needed.
- Follow instructions for accommodating the dietary needs and preferences of guests.
- Ensure the proper labeling and dating of food items and that proper rotation of products occurs.
- Wash and disinfect the kitchen area, tables, tools, knives, and equipment as needed or as directed.
- Follow all company safety and security policies and procedures; report maintenance needs, accidents, injuries, and unsafe work conditions to the manager; complete safety training and certifications as required.
- Uniform and personal appearance are always both clean and professional.
- Maintain confidentiality of proprietary information.
- Interact with guests naturally and professionally as required, address guest concerns as they are learned or immediately direct the manager that will resolve the concern.
- Develop and maintain positive working relationships with others; support the team to reach common goals.
- Speak with others always using clear and professional language.
- Ability and willingness to perform all additional tasks as required for the success of the operation.
- Willingness and ability to travel for events in California.
Qualifications:
- 3-5 years of cooking in a restaurant environment is required.
- Previous experience in a fine dining kitchen environment is highly preferred.
- Ensure proper storage of food items and supplies, following health department food safety guidelines.
- Hold a California ServSafe card.
- Basic understanding of high-end cooking techniques and food safety practices.
- Ability to follow directions and work collaboratively in a team-oriented environment.
- Commitment to working as part of a team, and reliability are a must.
- Flexibility to adapt to the fast-paced demands of the kitchen.
Physical Requirements:
- Move, lift carry, push, pull, and place objects weighing less than or equal to 50 pounds without assistance.
- Stand, sit, or walk for an extended period.
- Reach overhead and below the knees, including bending, twisting, pulling, and stooping.
