We are seeking a passionate, diligent, highly focused Executive Chef to lead our Delta Sky Club DTW team! This is an excellent opportunity to join a dynamic, growing account with Eurest! As an Executive Chef, you will oversee all culinary functions for this busy Sky Club, ensuring exceptional culinary offerings each day. You will manage and lead a team of engaged, focused associates and oversee all safety and sanitation as it pertains to the account. Wowing our Delta guests is a priority!
- Salary- $85,000-$90,000 *based on skill, experience, and work history
- The lounge is open from 6 AM -10 PM - 365 days a year
- Based on a 50-hour work week - Open availability is required
- Experience in Fine Dining and/or VIP Clubs is HIGHLY DESIRABLE
- Plans regular and modified menus according to established guidelines, in collaboration with the Delta & Eurest culinary leadership team
- Follows standardized recipes, portioning and presentation standards. Completes and utilizes daily production worksheets and waste log sheets. Tastes completed meals to ensure quality
- Trains kitchen staff in food preparation, safe handling, operation of equipment, food safety and sanitation based on Company and regulatory standards
- Establishes and maintains cleaning and maintenance schedules for equipment, storage and work areas. Ensures that kitchen staff follows and completes schedules as assigned
- Maintains inventory of all supplies to stay within established guidelines while assuring that necessary product is available when needed
- Makes all decisions regarding utilization of leftover food products staying within Company guidelines for such products
- Complies with federal, state and local health and sanitation regulations and department sanitation procedures as evidenced through local health department and third-party audits
Preferred Qualifications:
- A.S. or equivalent experience
- Minimum of three to five years of progressive culinary/kitchen management experience, depending upon formal degree or training
- Fine dining, Executive Chef leadership experience is a must
- High volume, complex foodservice operations experience - highly desirable
- Demonstrated success leading an engaged, focused culinary team; you're an emotionally intelligent leader with a track record of building great teams.
- Comprehensive knowledge of food and catering trends with a focus on quality, production, sanitation, food cost controls, and presentation
- Business systems savvy and reporting acumen (to include MS Office)
- ServSafe certified - highly desirable
