We are looking for a talented Executive Chef to coordinate activities including training, menu implementation, and banquet activities. ESSENTIAL FUNCTIONS: Plans or participates in planning menus and utilization of food surpluses and leftovers, taking into account probable number of guests, market conditions, popularity of various dishes, and regency menu. Estimates food consumption and purchases or requisitions foodstuffs and kitchen supplies. Reviews menus, analyzes recipes, determines food, labor, and overhead costs, and assigns prices to menu items. Directs food apportionment policy to control costs. Supervises cooking and other kitchen and stewarding personnel and coordinates their assignments to ensure economical and timely food production. Observes methods of food preparation and cooking, sizes of portions, and garnishing of foods to ensure food is prepared in prescribed manner. Tests cooked foods by tasting and smelling them. Devises special dishes and develops recipes. Familiarizes newly hired Cooks with practices of kitchen and oversees training of Cook Apprentices. Establishes and enforces nutrition and sanitation standards for restaurant. Keep cooks line well stocked with food, plates and utensils. Keep the kitchen as clean as possible at all times. Area should be completely cleaned at the end of each shift. Ensure proper sanitation procedures are in place and followed and compliance with health department, ServSafe, and any other regulatory, brand, and management standards are being observed at all times. Ensure that all orders are prepared for delivery in the 20 minute service standard. Ensure the menu is executed as published and that food meets the highest quality standards; ensure that duties are assigned so that the kitchen area is kept clean and in good repair. Responsible for ensuring adherence to Marriott Brand Standards and Safety Audits. SUPERVISORY RESPONSIBILITIES Utilizes leadership skills and motivation techniques in order to maximize employee productivity and satisfaction. Selects qualified employees and provides departmental orientation and training. Conducts employee meetings and counseling sessions in order to maximize employee morale and productivity and foster a sense of community. Determines and communicates standards of performance to employees. Evaluates employee performance on a regular basis and recommends salary increases as appropriate. Develops employees to maximize potential and prepare for future promotional opportunities and counsel employees on career development. Ensures that disciplinary action is taken as required ensuring consistency, fairness and respect within framework of established guidelines. Build and maintain relationships with the business partners through proper communication and follow through. Oversee the writing, implementation, training, and execution of new menus and recipes. Qualifications Education: One-year certificate from college or technical school; or equivalent combination of education and experience. Experience: Minimum of one year in Executive Chef or Executive Sous Chef position. The employee must regularly lift and/or move up to 10 pounds, frequently lift and/or move up to 50 pounds, and occasionally lift and/or move up to 25 pounds. While performing the duties of this job, the employee is regularly required to stand and use hands to finger, handle, or feel objects, tools, or controls. The employee frequently is required to walk and taste or smell. The employee is occasionally required to reach with hands and arms; climb or balance; and stoop, kneel, crouch, or crawl. Previous experience working with Marriott branded hotels is preferred. Ability to communciate verbally in Spanish preferred. Compensation Range The compensation for this position is $75,000.00/Yr. - $80,000.00/Yr. based on qualifications and experience.
