Ensure compliance with all federal, state and local regulations concerning health, safety, or other requirementsROLE AND RESPONSIBILITIESFinancial Returns: Monitor budget and control expenses with a focus on food, beverage, and labor costs. In partnership with the catering office, identify additional sales opportunities to enhance revenue. Drive promotions that deliver great dining experiences for guests at a good value. Ensure all credit and financial transactions are handled in a secure manner.People: Assist in the day-to-day staffing requirements, plan and assign work, and establish performance and development goals for team members. Assist with recruiting, hiring and training new F&B team members Ensure all personnel follow specific food and beverage protocols to increase client satisfaction Provide mentoring, coaching and regular feedback to help manage conflict and improve team member performance. Communicate any employee relations challenge in the F&B department to F&B Manager Educate and train all team members in compliance with federal, state and local laws and safety regulations. Ensure staff is properly trained on quality and service standards, has the necessary tools and equipment, and is empowered to carry out job duties. Work as team and communicate and co-ordinate with other departments to ensure excellent quality and service. May assist by performing dish washing or other kitchen duties as needed. Remain current in all updates with regards to new procedures and training. Follow directions thoroughly. Live and demonstrate the Maya Hotels core values. Satisfactorily communicate with guests, management and co-workers to their understanding. Perform department/outlet opening or closing duties as required. Ensure that wait staff stations are clean and maintained throughout shifts. Follow hotel safety protocols and procedures at all times. Resolve and report any safety/service incident to the General Manager.Guest Experience: Ensure all food and beverage equipment are in proper operational condition and are cleaned on a regular basis. Ensure that all food and beverage facilities including banquet/convention space are cleaned, vacuumed, and properly stocked according to anticipated business volume. Notify engineering immediately of any maintenance and repair needs. Establish and achieve quality and guest satisfaction goals. Respond in a courteous and prompt manner to all guest questions, complaints and/or requests to ensure a high level of guest satisfaction. Take action to solve guest problems/complaints and use established guidelines for any service recovery to ensure guest satisfaction. Anticipate and address guest's service needs. Maintain confidentiality of guest information and pertinent hotel data.Responsible Business: Maintain sanitation and cleanliness standards in the kitchen area that meet or exceed any local laws regarding health and safety Maintain a clean, neat and well-organized work area, including but not limited to reach-ins, walk-ins and counters Follow all established safety protocols and procedures at all times. Immediately report any unsafe or malfunctioning equipment or any safety incident to General Manager. Maintain a professional and high-quality service-oriented environment at all times. Business attire and personal appearance are kept clean and professional and are in accordance with Maya Hotels Grooming Policy. A smile is considered part of the uniform. Comply with Maya Hotels policies, procedures and Code of Ethics. Manage local food and beverage marketing programs for the hotel; participate in and maintain system-wide food and beverage marketing programs and promotions. Monitor local competitors and industry trends. Review and approve menu design and concepts with Executive Chef. Conduct proper food and beverage inventory procedures. Determine minimum and maximum stocks for all food, beverage, material, and equipment. Ensure the security and proper storage of food and beverage products, inventory and equipment, and replenish supplies in a timely and efficient manner while minimizing waste. Perform other duties as assigned. May also serve as manager on duty. Promote a safe working environment Learn and adhere to all fire and emergency procedures, including procedures for handling of the fire panel, ensuring guest safety and participate in an evacuation if necessary. Practice safe working habits, including bending and lifting appropriately to avoid injury, reporting hazards, appropriate set of cleaning chemicals and working to minimize tripping and falling hazards, Prioritize and organize. Be a clear thinker, remaining calm and resolving problems using good judgement.
