Position Description
Supervises and directs work involving direction of employees involved in the preparation and replenishment of food and/or custodial duties of the food service areas.
Major/Essential Functions
* Perform routine tasks consistently.
* Knows and applies food safety policies and procedures for department.
* Observe and evaluate workers and work procedures to ensure quality standards and service, and complete disciplinary write-ups.
* Monitor and coordinate food preparation: Personnel, economics, methods, portion sizes, and presentation must follow guidelines set by the department and be completed in an acceptable and timely manner.
* Supervise and participate in food preparation, meal presentation and cleaning activities.
* Schedule staff hours and assign duties.
* Keep the food truck clean at all times, inside and out, and report any maintenance issues/concerns immediately.
* Operate and clean food service equipment without supervision.
* Be a team-member and positively influence co-workers.
* Train workers in food preparation, equipment use, customer service, sanitation, and safety procedures.
* Maintain food and equipment inventories.
* Amount of time and type of supervision is determined by supervising manager. Number of employees varies with the location in which employee works.
* Take and record temperature of food and food storage areas, such as refrigerators and freezers.
Required Qualifications
Graduation from high school or the equivalent plus two (2) years experience in large scale commercial or institutional food operations; additional experience may substitute for education on a year for year basis.
Preferred Qualifications
Previous experience with large scale operations in a leadership capacity.
