Description and FunctionsOpen Until FilledGENERAL DESCRIPTION:The Wyoming Department of Corrections contributes to public safety by exercising reasonable, safe, secure, and humane management while actively providing offenders opportunities to become law-abiding citizens.The Wyoming Medium Correctional Institution (WMCI) is designed to serve as the main intake and assessment center for male inmates. It serves as a primary education and treatment center for inmates requiring high levels of protective custody and medical, mental health, dental, substance abuse, life skills, cognitive/behavioral, and/or sex offender treatment services.The Food Service Specialist will assist the Food Services Supervisor with supervision, direction, and training of inmate food services workers to prepare, serve, and store food according to institutional and USDA Food Standards.Human Resource Contact:...@wyo.gov/ 307-###-####ESSENTIAL FUNCTIONS: The listed functions are illustrative only and are not intended to describe every function which may be performed at the job level.* Directs coordinates prepares and supervises food preparation for meals within guidelines of the menu, dietary requirements, and the standards of appearance, taste, temperature, and sanitation.* Trains workers in safety and sanitation.* Directs the preparation of all religious and medically necessary diets and substitutions.* Directs the portioning and serving of all meals.* Oversees distribution of bulk food and pre-plated meals.* Ensures that health guidelines are met in the daily preparation of food.* Manages inventory and reviews daily on all items.* Completes daily inventories of knives, controlled food items, and tools.* Observe and record food, refrigerator, and freezer temperatures.* Maintains a safe and secure facility. Will provide a safe and secure facility to provide inmates the opportunity through treatment programs available to make positive changes in their behavior. Provides a climate of mutual respect between staff and inmates.* Responsible for ensuring a safe and enjoyable workplace, including participation in initiatives designed to promote a positive work environmentQualificationsPREFERENCES:Preference may be given to those with correctional food service experience.KNOWLEDGE:* Knowledge of food safety practices, handling, temperature control, etc.* Knowledge of basic employee supervision methods.* Knowledge of meal preparation and quantity/quality controls* Knowledge of procurement, receiving, and storage methods.* Knowledge of State and Federal laws governing food preparation* Knowledge of handling, storage, and sanitation.* Skill in written and oral communications.MINIMUM QUALIFICATIONS:Education & Experience Substitution:2-4 years of progressive work experience (typically in Food Services) with acquired knowledge at the level of a Food Services AssistantCertificates, Licenses, Registrations:NoneOREducation:Associate's Degree (typically in Culinary Arts)Experience:0-1 year of progressive work experience (typically in Food Services) with acquired knowledge at the level of a Food Services AssistantNecessary Special RequirementsPHYSICAL WORKING CONDITIONS:* Because a correctional institution is a controlled environment, inmates will often attempt to disrupt that environment.
