Position Summary:

This position is responsible for ensuring the profitability of the store through managing the operations of the restaurant, including the achievement of sales objectives; cost control and personnel management while maintaining high standards of food, service, health, and safety. This individual must lead and motivate a team to carry out daily tasks to effectively operate the business in a fast-paced and team-oriented environment. The General Manager's position requires that you be available to work the required 50 hours mandated by the job, including weekends, nights and holidays.

Primary Duties and Responsibilities:

  • Directs, plans and oversees the operations of the outlet including guest and employee satisfaction, marketing, entertainment, financial performance, sales and revenue generation.
  • Oversees all hiring, training, scheduling, evaluating and counseling of staff through providing performance feedback and communicating and enforcing policies and procedures.
  • Ensures that guests are served in a courteous and timely manner to maintain customer satisfaction objectives.
  • Schedules labor as required by anticipated business activity, ensuring that all positions are staffed as needed while meeting labor cost objectives.
  • Creates and manages the operational budget and controls expenses, with a focus on sales, supplies and labor.
  • Orders inventory on a timely basis to ensure adequate supplies and controls food costs as budgeted.
  • Ensures that the property is kept clean and always maintained. Ensures proper sanitation and cleanliness in accordance with state and any other health requirements and maintains Mohegan Sun and Jersey Mike's standards.
  • Responsible for all local marketing efforts to ensure the maximization of sales.
  • Works with various internal departments to execute the 21 Social business plan.
  • Partners with the Social Media and Marketing departments to create and implement marketing initiatives.
  • Develops the outlet business plan.
  • Stays highly visible and interfaces with guests on a regular basis to obtain feedback on quality, service levels and overall satisfaction.
  • Creates dynamic visuals for all printed and static collateral including menus and branded items.
  • Maintains confidentiality of guest information and pertinent departmental data.
  • Maintains positive guest relations at all times.
  • Is an advocate of the company's mission, vision and values on a consistent basis.
  • Secondary Duties and Responsibilities:

  • Ensures all staff are trained in service standards, sanitation and safety practices and the responsible service of food and alcoholic and non-alcoholic beverages.
  • Maintains a clean, safe, hazard-free work environment and ensures sanitation compliance.
  • Builds rapport, commitment and loyalty with customers and associates.
  • Resolves guest complaints and ensures guest satisfaction.
  • Responsible for discipline in accordance to company policies and procedures.
  • Performs other related duties as assigned.
  • Minimum Education and Qualifications:

  • High school diploma or equivalent.
  • Five (5) years of restaurant leadership experience, three (3) years of which must be in a quick service or fast casual dining environment.
  • Experience with revenue and expense accounts and relationship with store profitability.
  • Competencies:

  • Strong presentation and interpersonal skills.
  • Ability to anticipate guest's needs, respond promptly and acknowledge all guests, however busy or the time of day.
  • Ability to perform job functions with attention to detail, speed and accuracy.
  • Thinks clearly, remains calm and resolves issues using good judgment.
  • Ability to work independently with minimal supervision.
  • Thorough knowledge of the Mohegan Tribal Employment Rights Ordinance (TERO) as it relates to employment.
  • Training Requirements:

  • Must complete all appropriate Human Resources Manager Training courses.
  • Successful completion of Jersey Mike's portal training.
  • Must develop a thorough knowledge of culinary disciplines and cost factors (labor, food, etc.).
  • Knowledge of SharePoint.
  • Fire and Safety training.
  • SMART alcohol awareness.
  • Understanding of Scheduling and Time & Attendance system and Manager Self Service systems.
  • Physical Demands and Work Environment:

  • Must be able to work in a casino environment with possible exposure to secondhand smoke.
  • Must be able to stand for extended periods of time.
  • Must be able to work various shifts and flexible hours.
  • Must be able to work in and out of different temperature ranges.
  • Must be able to lift up to 50 lbs.
