A Five Guys General Manager leads the restaurant. Their responsibilities include, but are not limited to, leading the Team as well as making sure the restaurant is modeling Five Guys standards. They should also build a rapport with their Area Manager so they can work together as a team. The GM should exhibit strong communication and organizational skills. Be a problem solver. They should also motivate and inspire the Team. SALES: 1. Know your store's goals 2. Work to build monthly sales (Actual Sales) 3. Set goals to build comp sales from the previous year 4. Able to market and promote fundraisers following the guidelines for your area to increase sales 5. Conduct pre shift huddles including fry calibrations 6. Model Manager on the floor 7. Demonstrate Five Guys energy and attitude CONTROLS: 1. Maintain cost controls including but not limited to: food, paper, labor, over/ short, and operating supplies 2. Banking within 48 hours of deposits •Any unexplained loss of $100.00 or more will result in disciplinary action up to and including dismissal for the parties involved. This includes the safe and deposits to the bank 3. Monitoring EBITDA costs 4. Prepare the weekly operating report in Google by 11:00 am every Monday for review by your Area Manager 5. Input bills into Quick Books accurately using the appropriate vendor and date as they come in 6. Input Food, Paper, and Labor in Quick Books 7. Other administration tasks including MOR vs QB, Payroll, Ordering and Cash OPERATIONS: 1. The Secret Shopper Program and what contributed to the score 2. Steritech Scores and Health Department Audits 3. Compliance Mate Completion/Food Safety 4. GM Scorecard and work to attain overall improvement 5. Customer Complaints/100K transactions 6. Red Zone Report 7. Ensure that cleanliness, quality, and customer service are excellent. 8.Upkeep the organization/repair and maintenance needs for the restaurant in a timely manner and communicate to the Area Manager for completion 9. Communicate with the customer in a consistent and professional manner such as: -Customer complaints -Customer slip/falls (knowing how to handle and follow up an incident) 10. Make sure the restaurant has appropriate shift coverage after your shift. You should never leave the restaurant abandoned. PEOPLE: 1. Staff your location with the correct amount of people that demonstrate Five Guys attitude and energy 2. Communicate professionally and efficiently Upward and Downward •Upward meaning communication with your Area Manager and above •Downward meaning communication with the Team you are leading 3. Check and respond to your Rockham email in a timely manner 4. Evaluate the quantity, quality, and turnover of your staff 5. Ensure that you have the appropriate number of Certified Managers and Servsafe Certified people 6. Review your Shift Leads, AGMs, and Team Members once a year 7. Monitor that Team Members are properly trained according to Five Guys Standards 8. Possess the ability to improve the performance of AGMs and Shift Leads Create the labor schedule by Wednesday and posted by Thursday for the following week 9. Complete Payroll every other Monday by mid afternoon 10. Create an employee incentive program other than the Secret Shopper Program.
