Keeps people in assigned positions according to the positioning chart.
Becomes an expert at running the passe by calling tickets appropriately and controlling the pace of the kitchen to have the most efficient ticket times possible.
Maintains prep levels that are needed and avoids outs at all costs.
Delegates prep duties as needed.
Ensure all food is plated properly.
Delegate's cleaning duties as needed.
Ensures breaks are given at the proper time.
Helps to work with Shift Lead/General Manager to maintain morale.
Helps to maintain safety protocols.
Ensures all checklists and prep lists are completed.
