Job Summary:
All Kitchen Staff are required to serve as a food industry professional responsible for ensuring the quality preparation and delivery of all meals within a high volume dining hall environment
Primary Responsibilities:
* Foster a safe work environment that complies with Target Logistics and our client's policies and procedures.
* Comply with all state food safety rules and regulations.
* Adhere to MSDS/Chemical management standards for handling various cleaning chemicals.
* Operate kitchen equipment including but not limited to ovens, grills, slicers, knives, skillets and deep fryers, dishwashers.
* Prepare various meal items daily in accordance with the changing menu, in compliance with nutritional requirements and our client's quality standards.
* Understand the aesthetic requirements for food presentation and delivery.
* Address the diverse needs of customers in a professional and helpful manner.
* Cook-to-order food to the unique preferences or dietary restrictions of the customer.
* Hand wash and inspect dishes and pots as needed.
* Ensure that all food prep and dining areas are clean and sanitized.
* Complete other duties and responsibilities as assigned by supervisor.
Physical Requirements:
* Stand for long periods of time (up to 12 hours or longer) with scheduled breaks
* Short and long distance walking required
* Use of stairs and step stools
* Pushing/ pulling carts that weigh on average 50lbs
* Operate kitchen machinery
* Occasional lifting of up to 50lbs.
* Frequently reaching above shoulders, waist to shoulders and below waste.
* Perform repetitive movements at the wrist including side to side/ up or down and frequent grasping of an average of 10lbs with a maximum of 25lbs
* Simple, power and fine finger manipulation for a duration of an average 12 hour shift
Education and Experience Pre-Requisites:
* High school diploma or equivalent required.
* Certification from the American Culinary Federation preferred.
* At least 1 year in a customer service role required.
* 1-2 years of cooking experience in a food services environment preferred.
* 1-2 years Line Cook experience preferred.
* Experience working in an access controlled or corrections environment required.
Employment Pre-Requisites:
* Must meet pre-employment criminal background check and urinalysis standards.
* Must obtain a Public Trust Clearance.
* Must meet pre-employment credit check.
* Complete post-clearance training.
Environmental Considerations:
* Exposure to extreme kitchen temperatures.
* Facility construction on lodge premises.
* Lack of immediate access to critical medical services as well as urban community.
* Exposure to extreme natural weather conditions such as heat, drought and tornado.
* Possibility exposure of wildlife, insects or foreign diseases.
* Operate in a smoke, alcohol and drug free facility.
