Job Description:
In our 23rd year, The Red Onion Restaurant & Bar is a Hudson Valley dining institution. We are currenty seeking to hire a full-time HOT LINE COOK. Candidate needs to be an experienced professional capable of working a busy grill or saute station. Candidate should be fluent in classic French sauce making, stock and soup making as well having a solid command of braising and confiting. Candidate should also be totally competant at butchery and fabrication of all typical animal proteins, including seafood and fowl. The Red Onion kitchen is a highly organized and systematized and predictable place to come to work every day to practice your craft. We make all of our own pastas, burger buns., French fries and desserts. We make all of our sauces from veal and/or chicken bones. We also handle a large number of vegetable garnishes daily and seasonally. We use a number of local products as well as super-premium imports. We are an open-minded kitchen and welcome creative contributions where appropriate. Thank you for your consiuderation.
