Position Summary:The Healthcare AM/PM Cook is responsible for learning and staying familiar with menu items and assumes responsibility for all food rotation and proper timing of foods. Coordinates the placing of food on the steam and cold table with staff; works closely with the Chef to ensure that all items needed are in stock for the menu. Familiar with a variety of the culinary field concepts and procedures. Relies on experience and judgment to plan and accomplish goals. Performs a variety of complicated tasks. Coordinates with other dining staff for food preparation, presentation, and proper service procedures. The Cook is responsible for ensuring high quality dining and food preparation services for Members in a Member centric environment.Responsibilities:1. Prepares various hot and cold food products according to healthcare menus provided by the Director of Dining Services and Certified Dietary Manager2. Works from recipes, menus, production sheets, sanitation procedures and general instructions use of HACCP protocols3. The proper washing, chopping, cutting of various fruits and vegetables and the proper use of utensils and equipment4. Prepares various salad selections5. Assures that all dietary procedures are followed in accordance with established policies and procedures6. Responsible for plating of food for tray and dining room service, temperature recording of all food products7. Responsible for the sanitation of the service kitchens8. Makes sure that all the steam tables, work areas, floors and coolers are cleaned9. Makes sure all temperature logs are kept up to date10. Assures understanding of all diets and tray cards and menu breakdown sheets11. When Utility aids are not available, ensures the proper cleaning of dishes, glasses, silverware, floors and coolers and service carts12. Adheres to all sanitation and food handling protocols13. Properly maintains all work area14. Adheres to safeguards against cross-contamination15. Assists in special functions as needed16. Follows and complies with health and safety departmental safe job procedures.17. Attends and participates in all in-service programs.18. Uses good judgment in determining the needs of Members and working with the different departments and in maintaining delivery of those needs in accordance with recognized standards; and is expected to understand and follow all regulatory and facility policies.19. Maintains knowledge of federal, state and local regulations, policies and procedures regarding food service practices.20. Maintains confidentiality of Members' PHI (Protected Health Information) and medical records information as well.21. Other various duties as assigned.Qualifications:1. Must have at least a High School diploma or equivalent with at least 3 years of proven experience as a Cook preparing food on a large-scale basis for a minimum of six months. Senior Living culinary experience preferred.2. Supervisory experience preferred.3. Ability to read and understand recipes.4. Must be able to read and write and follow written instructions.5. Ability to produce a quality product on a consistent basis.6. Must have Sanitation Certification training as a Serv Safe Manager.7. Knowledge of processes for providing customer service, assessing customer needs, meeting quality standards and evaluation of customer satisfaction.8. Strong knowledge of local, state, and federal food sanitation regulations.9. Comfortable in providing direction and supervision to dining staff.10. Skill in understanding of computer software as it relates to the job.11. Excellent decision-making and analytical skills.12. Excellent leadership skills.13. Excellent communication skills and problem-solving skills.14. Excellent organizational and time management skills.15.
