Position Summary:Performs work that involves in the pickup, delivery, set up, service and breakdown of Catering Events. In addition, may perform the work of a Food Prep Specialist, Kitchen Helper, and Custodian. Work schedules include early morning, midday or night shifts. Hours are changeable, frequently on short notice, based on the requirements and needs of the unit/operationEssential Functions: Performs essential functions listed in the job descriptions for Catering Floater and for Food Prep Specialist, Kitchen Helper and Custodian, including:
- Operates the catering truck.
- Organizes and completes event pull sheets and related operational tasks.
- Under direction prepares food
- Operates Kitchen equipment including slicer, deep fryer, turbo chef, microwave, digital food monitoring system, espresso machine, and other similar equipment.
- Sets tables, carries trays, and serves according to established dining etiquette.
- Sets up food and beverage for service, ensuring temperatures are within safety guidelines and recorded. Take corrective action when necessary.
- Adheres to established production procedures in the performance of additional duties including, but not limited to: salad prep, plating, and beverage and/or bartending service.
- Assists with supervision and training of student employees.
- Controls food waste.
- Maintains production and usage records as required.
- Maintains established quality, food safety, and workplace safety standards, including HACCP and NYS Dept. of Health guidelines.
- Serves food and beverage. Communicates appropriately with customers about the food.
- Performs general cleaning, sanitizes facilities, trash removal, and dish washing.
- Restocks supplies, organizes small wares and dish storage.
- Provide attention to detail in creating dining room and buffet ambience.
- Demonstrates excellent customer service at all times while working in a fast-paced, team environment
- Participates in training and performs other duties as assigned
Food Prep Specialist
- Follows plans for and accomplishes high volume food preparation for the day and week. Completes work delegated by the Senior Food Prep Specialist or supervisor.
- Responsible for following established recipes.
- Maintains production and usage records as required.
- Checks and maintains quantity and quality of food
- Maintains high sanitary, hygienic, and safety standards and conditions, adhering to HACCP and NYS Department of Health guidelines. Assures cleanliness and maintenance of kitchen and equipment.
- Assists in directing work assignments of staff in the cooks' area. Trains student workers. Helps to coach and motivates student workers in the kitchen.
- Performs general cleaning, stocking and recordkeeping.
Kitchen Helper
- Under direction, prepares food such as pizzas, pastas, paninis, etc. using established recipes.
- Operates kitchen equipment including slicer, deep fryer, turbo chef, microwave, digital food monitoring system, espresso machine, and other similar equipment.
- Set up food for service, ensuring temperatures are within safety guidelines and recorded. Takes corrective action when necessary.
- Serves food and communicates appropriately with customers about the food.
- Performs cashier duties using the POS system.
- Maintains production and usage records as required.
- Maintains established quality, food safety, and workplace safety standards, including HACCP and NYS Dept. of Health guidelines.
- Performs general cleaning, trash removal, and dish washing.
- Restocks supplies.
Custodian
- Cleans and sanitizes facilities, designated areas, and equipment (i.e., sweeps, vacuums, mops, waxes, etc.)
- Removes trash
- Keeps inventory of cleaning supplies, orders replacements, and maintains cleaning supply storage area
- Arranges furniture
- Launders aprons, uniforms, linens, sheets, etc.
- Directs and trains student employees
Minimum Qualifications:
- High school diploma or equivalent.
- 1+ years banquet/ala carte/fine dining service experience.
- Ability to operate appropriate equipment and demonstrate its proper operation to others.
- Ability to effectively plan and execute flow of work.
- Ability to demonstrate familiarity with various table service techniques.
- Demonstrated dependability, punctuality, neatness and personal hygiene.
- Demonstrated ability to work well with others
- Able to read and write in English
- Possess basic math skills
- Possession of a valid NYS Driver's License
Preferred Qualifications:
- Food Safety ServSafe Certification (or ability to obtain within 12 months of hire).
- Server/Bartender certification.
- Bartender/cash handling experience.
- Understanding of storage, sanitation and safety procedures.
- Night, weekend and evening availability.
Physical Demands:
- Position is very physically active.
- Must be able to lift/move 30 lbs. on a regular basis
- Ability to stand (all day if necessary), walk, bend, kneel, crouch, twist and reach as the job requires.
- Ability to do repetitive motions: grasp, push, pull, fine manipulation with knives and other common kitchen implements.
Work Environment:Typical kitchen: exposure to extreme temperatures cold/heat, flame, chemicals, knives/sharp objects. Various offices, meeting rooms and banquet halls both on and off SUNY Brockport campus. Delivery and traveling in company vehicles to event locations.
