JOB TITLE: Prep Cook and Dishwasher REPORTS TO: Dining Manager HOURS: 11am - 8pm - Tuesday - Saturday with flexibility to work holidays and seasonal parties POSITION SUMMARY: Responsible for working with Dining Manager to develop menus for residents, following menus and recipes to cook all meals, preparing food for parties, celebrations and special occasions, and adhering to all health department rules. In carrying out the duties and responsibilities of the position, one must exercise creativity and ensure that food is delicious, appetizing and visually appealing in each dining venue. Panty/Prep Cook Essential Duties and Responsibilities:
Gather all foods needed for breakfast, lunch or dinner meals by following the menu. Work directly with the chef and receive assignment for the day. Wash, peel, cut and seed fruits and vegetables to prepare them for consumption. Bake, roast, broil and steam meats, fish, vegetables, and other foods. Weigh, measure and mix ingredients according to recipes or personal judgment, using various kitchen utensils and equipment. Observe and test foods to determine if they have been cooked sufficiently, using methods such as tasting, smelling or piercing them with utensils. Plate food in an attractive manor. Able to lift, unload and move food and supplies; lift dishes to storage location. Required to work independently or aid others in the cleaning of all items used in the serving and preparation of the meals. Use kitchen equipment safely by operating electrical and mechanical equipment. Maintain appropriate inventory of food and supplies. Proficiency in vegetable Scullery, preparing cold foods, light baking, basic entry level cooking skills. Utility/Dishwasher Essential Duties and Responsibilities:
To ensure adequate supply of clean utensils and dishes and pots and pans for use. Scrap trays, soak dishes, utensils, and assemble dish machine. Operate an industrial dishwasher. Set up and wash pots and pans. Clean Equipment including cooler, oven, stove Stock the cooler and verify items received in order Clean the floors of the kitchen and coolers. Removal of trash from kitchen. Operate an industrial dishwasher. To ensure proper safety and sanitation guidelines are used. Perform opening and closing side work. Clean up spills or broken glassware immediately. To provide quality food to residents, visitors, employees and guests in a timely manner. Making tea and coffee, cleaning coffee machines in health care. Working on tray line, setting up the trays with utensils, napkins, condiments, read and call out the diet cards, some bending over for tray and lifting up to 10 pounds. Putting plates, desserts, and drink on tray then put on cart, some bending is required as well Cleaning area and putting away milk and juice. Empty and clean tea urns and coffee pots. Pick up trays and trash from floor Assist with sweeping and mopping the floor. Must be able to lift trash cans. Essential Duties of all Dietary team members:
Reports all unusual conditions, behaviors, and/or resident complaints to the supervisor. Responds and reacts in a kind, polite, and professional manner to residents, families, visitors, coworkers, and supervisors. Responsible for protecting any confidential information concerning residents, family, and/or the organization. Must demonstrate knowledge of and comply with all CMS and NC health/ServSafe regulations and procedures. Must adhere to all facility and departmental Fire, Disaster, Threat, and Emergency procedures. Adheres to all organizational and departmental policies and procedures in the performance of position responsibilities. Must attend organizational and/or departmental training sessions, Relias, and/or in-services as scheduled. May be required to perform other duties in keeping with the nature of this position which will not significantly alter the job requirements Experience:
- 1 year experience in a full service kitchen (non-fast food) is preferred
