**Job Summary:** Prepares a variety of food products for cooking and for use in other menu items to include meats, poultry, vegetables, sauces, dressings, stocks, sauce, beans, breads according to the Daily Prep List.
**Essential Duties & Responsibilities:**
* Promote, work, and act in a manner consistent with the core values and mission of Phils BBQ (PHILS).
* Refer to daily prep list and/or confer with KM/AKM at the start of each shift for assigned duties and pars.
* Understand and comply with standard portion sizes, cooking methods, quality standards, and kitchen rules, policies, and procedures.
* Clean and sanitize work stations, work surfaces, tables, shelves, walls, grills, fryers, pasta cooker, slicer, mixer, sinks, kettles, rationale ovens, toaster oven, knives, and other equipment.
* Stores and label food in designated containers and storage areas to prevent contamination and spoilage.
* Butcher, clean, carve, trim, chop and seasons poultry, beef, and pork to prepare for cooking or serving.
* Monitor and record temperature of food in cold and hot food holding and storage areas and refrigerators.
* Wash, peel, clean and cut various foods, such as vegetables, to prepare for cooking or serving.
* Place food trays in food warmer areas for immediate service or store them in refrigerated storage cabinets.
* Portion containers according to standard portion sizes and recipes.
* Weigh and measure ingredients.
* Use probes and thermometers to take regular readings for warm and cold holding items and cooked meats.
* Mix ingredients for green salads, potato salad, macaroni salad, batter, steamed veggies, and baked beans.
* Receive deliveries and store food, supplies, equipment, in refrigerators, cupboards, and dry storage areas.
* Remove trash and clean kitchen garbage containers.
* Assist cooks and kitchen staff with various tasks as needed, and provide cooks with needed items.
* Properly carry food supplies, equipment, and utensils to and from storage and work areas.
* Use manual or electric appliances to clean, peel, slice, and trim foods.
* Immediately report all facility, safety hazard or equipment problems to management and coworkers.
* Prepare proprietary batter, special dressings, and sauces as condiments for menu items.
* Strictly follow the all standard recipes and techniques for preparing all products.
* Complete opening and closing checklists and assist others in opening and closing the kitchen.
* Attend all scheduled mandatory employee meetings and offers suggestions for improvement.
* Fill-in for coworkers where and as needed to ensure guest service standards and efficient operations.
* Butcher, clean and cut poultry, beef, and pork to prepare for cooking or serving.
* Keep records of the quantities of food used.
* Load dishes, utensils, glasses, cookware and tableware into dishwashing area.
* Cut or slice beef trip-tip, beef ribs, poultry, or pork butt or pork ribs to prepare for cooking.
* Stock cupboards and refrigerators, and tend to salad bar, and veggie prep items.

**Minimum Qualifications & Physical Requirements:**
* Ability to speak, see, hear, read, and write in the English language (Spanish a plus).
* Authorized to work in the USA (we E-Verify).
* Possess valid Food Handler Card (will certify if lacking).
* Possess ServSafe Certificate (will certify if lacking).
* Sexual Harassment Prevention Training (will certify if lacking).
* Able to communicate effectively with managers and kitchen personnel.
* Must be able to hear with 100% accuracy with or without correction.
* Must be able to see 20/20 vision with or without correction.
* Ability to walk or stand in one spot for long periods of time (up to 8 hours and possibly 10 hours).
* Ability to regularly lift objects weighing between 5-45 lbs.
* Ability to frequently bend, reach, stoop, crouch, grasp, grip, pull, and push objects and occasionally climb.
* High level of mobility, manual dexterity, and endurance.
* Ability to work in refrigerated and warm work environment with an open flame mesquite wood grill.
* Ability to work in an environment with heat, odor, some fumes, steam, and some smoke particulate.
