Prep Cook (Preparador) Job Description: The Prep Cook is the team member who keeps our coolers full of the right amounts of fresh prepared food items. The Prep Cook and Cocinero work together as a team to keep the hot and cold line stocked with fresh food for our guests andthe kitchen running smoothly. This position requires proper execution of recipes, a good understanding of kitchen equipment, sound knowledge of weights and measurements, and close attention quality. The Prep Cook should have a passion to make fresh and delicious food and the ability to make it quickly and accurately. It is the Preparador's job to taste everything he/she makes and discuss with the Kitchen Leads/Mentors and Leadership team members when necessary to ensure quality. The Prep Cook works closely with the Kitchen Leads and under the supervision of the MOD to determine what is on the prep list for the day, in what order products on the prep list need to be prepared, and what batch sizes are appropriate. The Preparador complies with safe food handling procedures and has safe knife handling skills. Prep Cook Daily Responsibilities:
- Accurate replication of all recipes
- Setting up and stocking the cold lines
- Completing all tasks on their daily prep list
- Unloading and organizing deliveries
- Practicing safe food handling procedures in all aspects of work
- Assisting the Cocinero in keeping the line stocked and fresh during service
- Assisting the Dishwasher with cleaning, organizing, and garbage
- Maintaining a clean and organized prep kitchen and refrigerators
- Cleaning up after themselves and helping the Dishwasher maintain the cleanliness of the kitchen areas.
- They must take proper care of kitchen equipment and inform the MOD when equipment is not function properly.
