This position demonstrates competence in the performance of duties and responsibilities related to food production, demonstrates competence in the performance of duties and responsibilities related to ensuring sanitation within the department, and demonstrates competence in the performance of duties and responsibilities related to procurement.

1. Demonstrates competence in the performance of duties and responsibilities related to food production.

a. Follows production sheets to ensure adequate production quantities for all meals and minimize waste.

b. Follows recipes accurately to ensure quality products that maximize customer satisfaction as measured by RSVP and Press, Ganey.

c. Supports the implementation of Gold Check action plan. Results show continual improvement.

d. Works efficiently and prioritizes tasks to complete within scheduled hours.

e. Contributes to production staff meetings on a regular basis and implements new changes/ideas. (If did not attend meeting reads minutes.)

f. Utilizes leftovers efficiently and in a timely manner (by anticipating food expiration) to minimize waste.

g. Handles knives and operates all equipment in a safe manner.

h. Ensures that safety within the kitchen is maintained, completing work orders as needed.

2. Demonstrates competence in the performance of duties and responsibilities related to ensuring sanitation within the department.

. Practices and supports the HACCP program.

a. Completes tasks in a fashion to prevents cross-contamination and time and temperature abuse.

b. Gets/ Maintains ServSafe certification.

c. Complies with cleaning schedules to ensure sanitation of production equipment and area.

d. Stores food properly: covered, labeled, dated, rotated. Stored to prevent cross-contamination.

e. Ensures that the sanitation of the kitchen meets requirements of all regulatory agencies (along with other managers).

f. Practices personal hygiene, particularly hand washing.

g. Wears gloves when appropriate I.e. ready to eat foods.

3. Demonstrates competence in the performance of duties and responsibilities related to procurement.

. Places milk order on a regular basis and places others orders as directed by chef during his absence.

**Qualifications**

**Experience Minimum Required**

Two years professional cooking experience.

**Experience Preferred/Desired**

Food production experience in a Healthcare setting.

**Education Minimum Required**

High School diploma

**Education Preferred/Desired**

Two year culinary degree

**Special Skills Minimum Required**

Ability to read and extend recipes.

Proficient in a variety of food preparation techniques.

Knowledgeable of food safety and sanitation.

**Licensure and/or Certifications Preferred/Desired**

Driver's License, ServeSafe
