We are seeking a dedicated Production Specialist to join our team. This role involves various tasks across different departments to ensure efficient cheese production. The ideal candidate will have experience in the cheesemaking process and possess strong attention to detail.
Key Responsibilities:
Milk Receiving: Assist with the HTST process, whey separation, and filtering.
Standardization and Pasteurization: Standardize and pasteurize milk for cheese production.
Ingredient Management: Measure and weigh ingredients and cultures for cheese recipes. Monitor cheese vats and assist in the cheesemaking process.
Cheese Production: Form and flip cheese, prepare cheese for brining, and sanitize racks and forms.
Aging Monitoring: Monitor cheese in cellars for proper aging and perform quality swabbing. Clean and maintain equipment and cheese boards.
Packaging Preparation: Scrape, spice rub, food wrap, cut, label, hand smear and paint, or pack cheese for distribution.
Packaging Construction: Construct and prepare packaging and containers for cheese products and properly package cheese products prior to distribution.
Qualifications / Minimum Requirements:
- Knowledge of cheesemaking process flow from start to finish.
- Experience in, or knowledge of, each step of the process.
- High School Diploma or GED.
- Intermediate computer skills including e-mail, word processing, and spreadsheets.
- Excellent written and verbal communication skills.
- Experience with JD Edwards software is a plus.
- Ability to work in a fast-paced environment.
- Ability to multi-task and prioritize under pressure.
- Ability to work in cross-functional teams.
- Detail-oriented nature.
- Ability to work with minimum supervision.
- History of good attendance.
- Excellent observational skills and hand-eye coordination.
- Ability to work varied schedules based on production needs.
