OverviewJob Summary This role will conduct carcass and carcass part sorting activities and identify any abnormal conditions or defects before carcasses and their parts are presented to online inspectors. The focus will be to separate carcasses, heads, and viscera that are abnormal from those that are normal. Key Responsibilities
- Observe, palpate, and incise carcass and carcass parts to determine if abnormalities exist.
- Perform preparation (e.g., cuts) and presentation activities.
- Follow FSIS regulations and company procedures (e.g., heads, tongues, viscera, carcass).
- Notify the proper person if you identify, while conducting sorting activities, an animal or carcass you suspect has a reportable or foreign animal disease.
- Attend training at hire and annual refresher training as needed.
- Must be willing to train and educate others.

QualificationsMinimum Qualifications (Required):
- Must be 18 years of age or older.
- Must be able to work in the United States without sponsorship.
- Must be able to work in a variety of work temperatures warm, hot, humid, cold, wet or with slippery surfaces at varied heights in and around moving equipment and parts with the use of personal protective equipment (PPE).
- High school diploma or GED.
- Demonstrated knowledge of food safety and quality.
- Must be able to successfully complete training:
- Beef Modernization
- Straight knife, steel, hook
Preferred Qualifications:
- Hands-on knowledge, training and/or experience in Basic Microbiology, Basic Chemistry, Sanitation, and HACCP.
- Knife experience.
- Quality assurance experience.
Knowledge, Skills, and Abilities:
- Must be able to work in a fast paced environment.
- Strong attention to detail and observational skills.
- Knowledge of beef anatomy to recognize common parts of the beef carcass, skeleton, and digestive tract.
