Marsanne is a Mediterranean–French upscale restaurant with an open kitchen concept that is opening this Spring. This would be the third restaurant that we have opening in the last 4 years. We are looking for a Sous chef who can lead our team and work closely with our CDC.

As a member of the culinary leadership team, this individual must be an independent worker and possess proven management skills.

In addition to technical skills, the ideal candidate must have strong interpersonal and communication skills, proficiency with Microsoft Office applications, experience being accountable for ordering, and the desire to learn and contribute.REQUIREMENTS:

  • Minimum 3 years of experience as Sous chef
  • Minimum 2 years of experience working in 125 seat restaurant
  • Team-orientated and positive attitude
  • Knowing the Spanish language is a plus

The Ideal Candidate Must Be Able To:

  • Work closely with CDC.
  • Hires, trains, develops, and appraises staff effectively. Takes corrective action as necessary on a timely basis and by company policy.
  • Follow recipes and team processes to ensure meeting time and quality standards.
  • Manage a team of 10 people.
  • Ensure food safety standards are always maintained, including proper storage of all kitchen items and areas.
  • Follow all cleaning procedures and ensure best hygiene and personal grooming practices.
  • Collaborate effectively and respectfully with all team members.
  • Effectively communicate with management and immediately report any equipment, food quality, and service issues.
  • Conduct daily line checks to ensure the highest quality of daily productions.
  • Ensure that sanitation standards as set forth by NYC DOH regulations are compliant.
  • Responsible for ordering food and daily count sheets.
  • Available to work weekends, nights, and holidays as the business dictates.
  • 3+ years in previous upscale restaurant as a sous chef
  • Manage all levels/areas of the back of the house and fill a role on the line or expo as needed.
  • Initiate relevant maintenance requests for repairs needed in the kitchen.
  • NYC Food Protection Course Certification
