OPPORTUNITY SUMMARY The Meat Room Assistant is responsible for assisting faculty and staff in meat identification and fabrication. As the assistant, you will assist with the identification of meat products, the fabrication of primal and sub-primal cuts and the packing and distributing prepared meat items to support the Meat Room Operations. SHIFTS
- Between Monday to Friday, 7am to 4pm
ACTIVITIES AND RESPONSIBILITIES
- Gather the daily fabrication items for class production.
- Assist with the daily fabrication, packaging, and storing including rotation of fabricated stock of daily class production.
- Assist in gathering the ID test items for Instructor.
- Assist or conduct demo for class with Instructor.
- Assist meat room manager with maintaining the correct inventory of related products that are generated through class production.
- Any and all other duties as assigned.
PREREQUISITES
- Basic meat knowledge
- Previous experience in a meat butchery environment
PREFERRED PRIOR EXPERIENCES
- Completed Culinary Fundamentals
- Completed CULS-115- Meat ID & Fabrication
- Serve-safe certified or equivalent

Successful applicant must be able to perform all related functions of the assignment which may include working nights and weekends, ability to bend reach and stand for long periods of time, lifting and carrying of items up to fifty (50) pounds, and the ability to withstand high ambient temperatures.
