Job SummaryUnder general supervision of the Registered Dietitian (NTRTN AND DIETARY SUPV 2) at the Western Human Nutrition Research Center in the Metabolic Kitchen and Human Feeding Lab, the CHEF 2 provides a wide range of services:- Participates in the planning, designing, producing, delivering, monitoring, and documenting controlled meals in human research studies.- Works with others to solve problems related to food service in the research setting (e.g., preparation, distribution, quality control, documentation, inventory, etc.)- Assists the RDN with improving overall production methods to improve efficiency of producing, delivering, and documenting diet intake.Apply By DateSeptember 24 th 2024QualificationsMinimum QualificationsFor full consideration, applicants are encouraged to upload license, certification and/or educational degree if required of the position.
  • High School Diploma
  • Minimum one year prior paid back-of-house food service experience required
  • Knowledge of professional food production
  • Verbal and written communication in the English language, active listening,
  • dynamic flexibility, critical thinking, multi-task and time management.
  • Ability to read and follow established and detailed written protocols.
  • Decision-making, reasoning, operations analysis, and quality control analysis.
Preferred Qualifications
  • ServSafe-certified
  • B.S. degree in Nutrition Science or Dietetics
  • Prior research experience
  • Ability to understand documents written using both plain and technical language.
  • Ability to work efficiently under pressure when presented with a large amount of work and to prioritize tasks.

Key Responsibilities
  • 50% - Food Production
Consistently prepares assigned menu items correctly following department recipes accurately and in accordance with departmental policies and procedures.Assist with development, implementation, and maintenance of quality control measures
  • 20% - Safety Compliance
Consistently follows ServSafe principles of food preparation, safety and sanitation at all times.Ensures quality control and ServSafe principles are met and adhered to during food production and service.Maintain a clean and sanitary food service work environment that includes daily cleaning and sanitizing of frequently used equipment, frequent cleaning and sanitizing of large equipment, and occasional deep cleaning of very large pieces of equipment, including walls, floors, windows, blinds, and difficult to reach places
  • 10% - Data Collection
Assist RDN with computerized menu management system. Audits recipes in computerized food systemsCompile meal checklists with sufficient detail to ensure proper items are served to study participantsMaintain proficiency with changes in technology.
  • 10% - Training
Oversees kitchen staff and ensures all food service health, safety, nutritional, recipe, policies and guidelines are adhered to at all times.Participates in coordination of staffing needs and schedules.
  • 10% - Customer Service
Develops, institutes, maintains and provides exceptional customer service standards.Department OverviewThe Metabolic Kitchen and Human Feeding Laboratory (MK&HFL) plans, designs, produces, delivers, monitors, and documents nutrient-controlled meals for human feeding studies with accuracy and precision. Several features of the MK&HFL make it similar to yet distinguished from typical food service operations. A feature that makes it unique from traditional food service operations is the strict measurement, control, and documentation of food composition and intake by research study participants.The CHEF 2 participates in coordinating production activities, assigning work and training of interns and part-time employees on proper food preparation technique. Exhibits expertise in all phases of food preparation and use of all kitchen equipment. Demonstrates good judgment in selecting quality assurance methods and techniques for obtaining solutions. Normally receives minimal instruction on daily work assignments with general instruction provided on new or more complex assignments.Position Information

Physical Demands
  • Ability to safely withstand prolonged standing and walking in refrigerator (up to 1.5 hours at a time at 4C, with 10-minute warm-up breaks) and freezing conditions (up to 30 minutes at a time at -20C with 10-minutes warmup breaks) while consistently using approved Personal Protective Equipment (PPE).
  • Ability to safely complete work with eye, hand, and foot coordination and manual dexterity necessary for performing tasks in a safe and rapid fashion according to established procedures.
  • Ability to safely reach, stoop, bend, kneel, and crouch for setting up, maintaining, and/or cleaning equipment and surfaces according to established procedures.
  • Ability to lift and carry objects regularly weighing 25 pounds, frequently weighing up to 50 pounds, and occasionally weighing up to 100 pounds (with assistance).
  • Demonstrate consistent ability to safely push/pull objects weighing up to 150 pounds on wheels, and over 150 pounds with assistance.
  • Demonstrate consistent ability to safely use a step-ladder to reach items above shoulder height.
  • Demonstrate consistent ability to stand for a minimum of two hours at a time.
  • Demonstrate consistent ability to maintain clean hygiene and hands according to established procedures.
