Old Brea Chop House is seeking a passionate, reliable Wine Director/Assistant General Manager to help lead their team and oversee the wine program. This role will be responsible for working with vendors, purchasing, receiving, inventory, and managing wine costs, in addition to having a strong floor presence with guests during service. The ideal candidate has an inherent IQ for hospitality, impeccable work ethic, and a passion to serve. Someone with a level 1 or 2 sommelier certification and experience managing a large wine inventory is highly desired. Responsibilities:

  • Oversee the FOH team
  • Creating a friendly and unpretentious atmosphere for guests around wine
  • Deliver a strong floor presence with a focus on wine sales and service
  • Oversee the flow of the business and remain present in all areas of the restaurant during service
  • Completing weekly wine inventory and placing orders
  • Ensure the team is well educated on the menu items and wine offerings
  • Hire, train, motivate and coach team members
  • Provide Support for other management staff in positive manner
  • Ordering, wine inventory, and scheduling
  • Perform all aspects of the job with a high level of professionalism and integrity
  • Establish a positive work culture that is in line with company culture, values, and philosophies
  • Contribute to controlling costs and maximizing efficiencies, identifying opportunity areas to course correct as needed
  • Take initiative and help to build business and maintain the wine program
  • Ordering, inventory and scheduling
  • Hold the team accountable to high standards while remaining hands on and leading by example
  • Assess employee performance and providing helpful feedback and training opportunities
  • Maintain health, safety and sanitation standards
  • Understand and comply with CA labor laws

Candidate Requirements:

  • Minimum 2-4 years' experience as a Wine Manager, Wine Director, Sommelier, Restaurant Assistant General Manager (AGM), Restaurant Manager, Food & Beverage Manager, Dining Room Manager, FOH Manager, or Hospitality Manager in a full-service, upscale, fine-dining restaurant concept is required
  • Extensive wine knowledge including characteristics, wineries, regions, varietals, food pairings and service is required
  • Level one or Level two Court of Master Sommeliers or equivalent reputable certification program HIGHLY preferred
  • Experience managing a large wine inventory
  • Passion and dedication to consistently educate the team and guests on beverage offerings, pairings and tasting notes
  • Achieve or exceed wine cost expectations while maintaining quality, accuracy and timing standards
  • Commitment to creating a welcoming, memorable, and unique guest experience
  • Basic understanding of administrative functions and controlling cost of goods
  • High attention to detail
  • Very reliable and punctual
  • Excellent communication skills, both verbal and written
  • Strong sense of integrity and initiative
  • Strong interpersonal, leadership, coaching, and conflict resolution skills
  • Ability to prioritize and manage time effectively
  • Ability to analyze processes and information, identify problems and trends, and develop effective solutions and strategies
  • Exceptional standards for cleanliness, health, and safety
  • Computer proficiency, including the use of Microsoft office
  • Flexible schedule, including weekends, and on holidays as needed
  • Food safety certification

Compensation Package Includes:

  • Base salary in the $80-90k range DOE
  • Discretionary Bonus
