About the role: Wine DirectorReports to: General ManagerOverseeing the wine program for the *** Michelin restaurant with around 150-200 references as well as the wine program for the adjoining bar. Primary Responsibilities:Beverage Program Management:•Oversee all aspects of the wine program, including cost control, cellar organization, purchasing, and supplier relationships.•Curate and maintain the wine list, pairing options, and by-the-glass selections.•Provide wine service during evening shifts, assisting guests with selections and ensuring exceptional service.•Mentor FOH staff on beverages, including wine, cocktails, beer, tea, and coffee.•Lead the wine team (sommeliers and interns), fostering their professional growth.•Lead and improve the wine and non alcoholic training programsLeadership & Collaboration:•Work with the FOH management team to deliver world-class service nightly.•Participate in daily and weekly meetings to review menu changes, sales, costs, goals, and projects.•Build strong relationships with suppliers and respond promptly to guest inquiries.Pre-Service Duties:•Collaborate with the kitchen team to pair wines with menu changes.•Order and track wines for pairings, by-the-glass, and bottle selections.•Maintain and update wine inventory, including monthly counts and bin locations.•Print updated menus for guests and the wine list for service.•Organize the cellar for accessibility and cleanliness.•Innovate non-alcoholic beverages and refresh tea/coffee menus as needed.•Host monthly staff meetings to review the wine program.Service Duties:•Assist sommeliers with wine station setup.•Greet guests, offer beverage options, and provide expert wine service.•Support FOH staff with food running, table clearing, and guest needs during service.•Coach the wine team on guest interactions and service tasks.•Maintain a clean wine station and assist with restocking and breakdown.Maintenance & Innovation:•Ensure daily upkeep of cellar refrigeration and air conditioning units.•Maintain friendly, professional supplier relationships and schedule tastings.•Continuously improve beverage offerings to reflect new products.Requirements:l•Proven restaurant FOH managerial experience. Experience in a similar role in a ** or *** Michelin-starred restaurant OR luxury hotel•Exceptional guest service and staff leadership skills.•Strong multitasking abilities.•In-depth knowledge of food and wine.•Expertise in wine knowledge, pairing, and service.•Proficiency in Microsoft Excel, Word, and cost management.•Excellent command of English; basic knowledge of wine-related languages.Compensation and Benefits:
- Salary: Up to $140 000 per annum
- Performance Bonus: 10 k
