  • Compensation: Salary, actual wage will be adjusted based on experience.
  • Benefits: Full-time, seasonal position eligible for a season pass for employee/dependents and privileges at several other resorts. Several discount programs (i.e. food & beverage, retail/rental, tickets, etc.) also available
Job Summary: The F&B Manager at Pico is responsible for managing all aspects of Pico Lodge Food & Beverage operations including FOH, culinary, and The Last Run Lounge Pub. Summary of Key Responsibilities: Responsibilities and essential job functions include but are not limited to the following:
  • Manage and teach a team of 30+ including an F&B Team Lead, Line Cooks, Cook IIs, Food Service Workers, Cashiers, Bartenders, Barbacks and servers
  • Responsible for overall direction, coordination, and evaluation of the employees
  • Provide innovative and cost-effective meals to our guests
  • Responsible for quality assurance of products presented to guests in all culinary functions
  • Plan, manage, and coordinate the daily operations of banquets and restaurant service
  • Coordinate and execute events throughout the season
  • Establish standards and procedures for staff
  • Report daily/weekly to senior management and provide detailed reports about the business unit
  • Create and manage orders, receive, and maintain an appropriate inventory of food and supplies
  • Prepare a variety of administrative/operations reports and records, such as timesheets and daily staffing reports and records
  • Execute and manage food production and daily mise en place
  • Coordinate and control food storage, daily maintenance of a variety of storage spaces
  • Utilize FIFO and follow company HACCP plan
  • Oversee day to day production and operations in the kitchen
  • Maintain and monitor hygiene, health, and safety standards and ensure that HACCP regulations are adhered to
  • Clearly understand and follow Serv Safe, local polices, and resort polices
  • Maintain and monitor quality of food and service on a daily basis
  • Ensure that the kitchen is properly organized, staffed, and directed in day-to-day duties
  • Work closely with staff in training on cooking techniques, and demonstration
  • Oversee all kitchen functions and provide support to the kitchen
  • Provide high quality food at high volume levels
  • Execute and conduct banquets at high levels, organize meetings with banquet staff
  • Control labor and food cost percentages
  • Work with the FOH to maintain upscale standards including all aspects at the bar
  • Conduct weekly safety meetings, reviewing with staff of known physical hazards that we deal with on a day-to-day basis
  • Ensure that signage and message boards are updated and communicated to staff to keep employees informed about upcoming events etc.
  • Promote safe food handling and work with developed HACCP plans state and company wide
  • Embrace and improve the Killington culture
  • Perform other tasks as assigned
Basic Qualifications:
  • College degree &/or training, and/or 3+ years in F&B
  • Knowledge of working Square POS systems, Microsoft 365 a plus
  • SERV Safe Certified and knowledgeable in all aspects of health and safety standards or ability to train & obtain
  • Broad and in-depth professional knowledge and skills in food & beverage
Required Knowledge, Skills, and Abilities:
  • Ability to deal effectively with a variety of company personnel, outside vendors, and guests
  • Ability to lift 50 lbs.
  • Ability to stand for long hours
  • Ability to effectively manage staff in multiple departments, train, motivate, and assign duties fairly
  • Familiarity with best practices in restaurant and banquet services industry
